Heather honey comes from nectar of Calluna Vulgaris i.e common heather or just heather.
This plant flowers in late summer or early autumn months and very often is the last plant that bees can feed on before winter. Because of that there are very few “impurities” from other flowers nectar.
Heather honey has a very unique, for European honey, qualities. Because it occurs in gel form it traps water (up to 25%) but does not ferment unlike other honeys. Even EU regulations take that fact into account and have made high content moisture permissible for heather honey. Other honeys have to have moisture level below 20% to be permitted for sale.Heather honey becomes temporary liquid only when it is stirred or agitated it
Heather honey is dark orange, reddish or dark amber colour and has a very distinctive, smoky tangy which leaves bitter after taste. It intensely smells of heather flowers and does not crystalise which is perfect for cut comb honey.
Health benefits of heather honey:
